I canned peaches on my own on Monday. It was mostly successful. I ended up with 12 quarts of sealed peaches, and only broke one jar! Most of my jars leaked syrup out of them, but I am not quite sure why. I think they are still fine to eat though since they sealed. Any ideas what happened? It took a lot longer than I was expecting. The skins of the peaches did not come off as easily as I expected. It may have been the variety of peaches, or maybe I should have waited two more days to can them.
